Spinach – magic Popeye food in a can! Unfortunately, I think everyone else has only had canned spinach, too. Which is nasty. Don’t do it.
Instead, buy spinach leaves that are beautiful, and fresh, and also pre-washed! Sold in bags and plastic cartons in pretty much every grocery store these days.
So, today, I had some spinach, shrooms, and some leftover goat milk from making a soup.

Here’s what I did:

Creamy Spinach

2 tablespoons olive oil
1 onion, chopped
1 – 8 ounce carton sliced mushrooms (optional)
1 – 16 ounce carton spinach leaves
1/4 cup canned goat milk*
garlic pepper
salt, pepper

Heat oil in a large skillet or wok over medium heat. Add the onion and mushrooms and sauté for about 5 minutes. Add the spinach leaves and goat milk and bring to a boil. Then simmer the mixture over low heat until the milk reduces, about 10 minutes, stirring often.

Season with garlic pepper, salt, and pepper.
A great side dish for pork, chicken, shrimp, steaks, and salmon. yum!

* you don’t have to use goat milk in this recipe, I just like using non-dairy substitutes occasionally, because they work. Any kind of milk or cream would work in this recipe, it just requires a reduction.

note: this is not the prettiest dish, let’s face it. but, it’s good, and healthy.
